Talk about feeling like a n00b.....

Went ahead and installed Plex over the weekend, and in troubleshooting why that wouldn't work remotely, I realized what my problem was. My cable modem wasn't bridged. Duh and doh!

Long story short, I used to remote into a Windows 7 machine from home a while ago, so I knew my router would work and I could get static IP addresses inside the LAN and configure port forwarding. However, since the last time I remoted into that Windows 7 machine, I've had a cable modem change. The new cable modem had never been bridged by Brighthouse Networks because I'd never asked them to.

Oh, well. Sometimes even the somewhat experienced amateurs forget to check or overlook step 1 in the process.

One final note. Amahi is awesome. And I'm starting to wonder where Plex has been all my life.
