I want to take an old PC and turn it into a NAS for my home.

The system exceeds the min requirements.

The important issue i have is that I live in a remote community that has sporadic internet access.

Can I configure Amahi to run without requiring it to be tethered to its servers via the 'net?

If so, HOW?

I would say that is a NO.

See Requirements in the wiki. You will note is says under Hardware that a hard-wired connection is mandatory.
