It seems that I have played with Amahi enough that I broke it. There are a few other things I want to correct (including trying out the Splashtop app) so I just decided to reinstall everything.
My question is about my partitions. I have 3 hdds: 1. 160GB OS drive with LVM / /swap /home partition that has Fedora 14 and Amahi. 2 & 3 are RAID1 storage drives that are mounted /var/hda/files and contain my shares.
1. Can I leave my partitioning the same and just reinstall?
2. How do I do that, assuming it is possible?
3. How do I keep from braking the RAID?
My plan is to temporarily mount my existing shares at /mnt during the install, created my old shares after Amahi is running and then change the mount to the shared RAID. I guess I may have to "dance" a little owner and group settings on the RAIDed shares once they are mounted but we will see.

I cannot help you much here as I am not familiar with RAID setups. In my opinion, they are not necessary when using Greyhole. Often they are more of a headache, especially if they break.
As for you current partitioning scheme, you can install and customize the partitions. That is part of the OS setup or you can let it choose for you. There is guidance in the wiki regarding RAID and some customization of Fedora partitions that might be beneficial.
A simple search in the wiki should yield the pages you need.

I did the RAID1 for instantaneous backup. Does Greyhole do the same? I am not as familiar with it.

Greyhole provides for storage pooling of multiple drives. It also allows per share configuration of file redundancy. It is simpler than RAID in my opinon and offers some similar features.
