Can I install express cd to hard drive through usb enclosure

I'm looking to install amahi via the express cd. The hard drive it's going on will be a transplant to a windows media smart server headless server. However, I don't have a desktop to plug this hard drive in to do the install. I do have a usb enclosure. Can I insert this hard drive in to the usb enclosure, hook it up to my macbook, and install the express cd? The big warning about it erasing all hard drives has me pausing.

Can't say I have ever tried it, but might work. I would be leery myself with that message.
