I want to install Fedora and Amahi on a 2GB CF card. Is it possible to get the installation size down to 2GB by deselecting some packages of fedora?

Yes, that's possible.
basically what you need to do is deselect your graphical environment (default = gnome) and a lot of assorted stuff, all the GUI tools etc.
most of the files on my system are in /usr/share/, I think you can clear quite a lot of it without too much trouble... but this can be better asked on the fedora IRC channel.
