Couple questions bout the install and networking of Amahi

I have a few questions so I will start with the one that I think is most important to my needs. I do not have the ability to set Amahi up on a network that is attached to the Internet. I will be setting this server at my parents house and then taking it to school with me for my storage and media streaming needs. Will this be possible? I have never set up a DHCP server and do not know if it needs to be done on the initial install of Amahi. The second is after I get it all up and running for updates will I be able to burn them to DVD and then install them on the Amahi machine? I have access to wireless network from the school. Another question I have is about the graphics card. I have a BFG Nvidia 8600 series card on in the tower now. Is it worth leaving the card in the machine? Will it help with the server or are all graphics needs taking care of by the machine being streamed to? I would like to sell the card if it is not needed. I think the motherboard has something like an Intel GMA 950 or something like that on it. The last question, and forgive me if I should ask this in Fedoras forums but I have decent know how with linux but have never done this, I want to set the OS on its own HDD and the media on another HDD. I would like the file system to be OS agnostic in case of OS HDD failure for media recovery needs, what file system do you guys suggest?
