I seem to be spinning my wheels, so I may just rebuild.
I'll copy the files to another drive, so I can easily edit the fstab, , etc.
anything else I should do? (best practices for re-installs)

Ideally I would say to follow the HDA OS Migration Guide but most of it requires access to the HDA 
You might be able to use a Live CD to get some info though.

the pain just doesn't end 
I unplugged all my external hard drives, and reinstalled amahi 7, from the boot cd.
it loads all good, so I start following the wiki on adding drives (really just doing hda-diskmount and editing fstab) since these drives were part of the old system, with data.
after rebooting between drives inserts, it's booting to emergency mode.
even if I disconnect all external drives, it goes to the emergency mode.
what does that mean?

Sounds like you have a bad drive.

it looks like 2 of 11 drives are marked as bad. they're ntfs drives so I'm checking them thru a Windows machine now.
Will I need to reinstall Amahi now that it goes into emergency mode (even with no external drives attached)?

Did you remove them from /etc/fstab?

Great to hear. To bad you didn't start on this path before reinstall. Would have made things so much easier for you.
