I have Verizon Fios with the Actiontec Router. I have just built a server running Amahi 8. I have been using it without the DNS on the server turned on. Although, I have tried to install Plex using the instructions on the wiki and it won't work I have figured out that is a DNS issue. Is there a way to turn off DHCP on the router without affecting my FIOS TV. Also I would like to use a VPN of some sort in order to access my files on the go.

No need to turn off the DNS on the server. You can set it to your router DNS.

Also there is guidance in the Amahi Wiki that might help with your need for VPN.
