Every so often I lose connection on an external Amahi VM, it is like the network connection fails and then after a few seconds it starts to ping again and I can see it.
The gateway etc is all correct and it works fine for about 3 or 4 minutes then dies for a minute, then works.

Recommend you check log files in /var/logs for errors. There may be a clue there somewhere.
This is likely an internal network, hardware, or ISP issue. There are many variables here, so have to start with the basics.
BTW, Are you using the HDA as your DHCP server or your router? Only one can be enabled at a time.

I was using this on a VM in a data center so I wasn't using DHCP on either. I couldn't get it working at all properly so back to the drawing board

Ah, understand.
There is a built in DHCP sever with Amahi that is enabled by default. Thought maybe that was causing conflict with the originating DHCP server.
