How are files allocated to disks

Hi,
I am wondering when i add a file to a disk pool... how is it decided which physical disk it will reside on ?..
Current using Ubuntu Server for sharing 2 physical disks - but like the look of Amahi. My concern is that one of my disks contains all my HD content while the other disk contains Documents, Music & Pictures. Ideally i want to keep the division like that. So when I add a HD movie, it will go to the correct drive.
The other question is, if i have a ext4 disk full of content - can i simply add it to the pool without it destroying the data on it ?
If my Amahi box fails, I assume can pull out the drives and disk can be accessed in the normal manner to view the files ?
Appologies for the newbie questions - but i don't want to risk loosing my data.
