I copied a file to my share and at quick inspection it looks to me like GH is saving tombstones 3 times. Is this what a normal entry in the log file looks like?

Yes, that is normal.
Tombstones are very small text files that contain metadata about the file copies, including the location of all file copies for a single file. As such, it's saved once at the beginning, when a decision has been made as the where the file copies will go, and then again each time a file copy is created, to mark it as 'OK'.
This is required to be able to fix any issue that would arise from shutting down the greyhole server while it's working on creating file copies.
