Using multiple drives

Hi. I am new to Amahi and the forum. I helped a friend setup an Amahi server at home and he loves it. I too am going to set one up and get rid of my Windows Home Server HPEX470. That said, I have some questions:(I am a linux noob.)
1 - I have a machine with a 320gb drive. I plan to install Amahi on that drive. Then I would like to add 2 more 1.5tb drives to the server for my shares. How can I set it up so that the 320gb drive just holds Fedora and the 2 1.5tb drives hole my shares (data). That way, if my drive running Linux dies, I can just reinstall on a replacement.
2 - I am assuming if I let that 320gb drive hole my shares(data), when it fills up I would be left with lots of extra space on the other 2 1.5tb drives that will be unusable for greyhole protection. Am I mistaken?
