how does Amahi / Greyhole get updates

Newbie question here, but I just build my amahi server, and after a week of rebuild and learning, leaning to this is reall good compared to WHS, so THANK YOU.

I am curious is there periodic 'patches' that are available, and how are they applied, sourced....

Amahi updates are automatic unless you turn them off. As for Fedora updates, those are disabled by default and you need to do them manually or turn the autoupdate back on.

Greyhole updates are included with Amahi updates.
The Amahi repository (at least the F14 one) follows the latest Greyhole releases pretty closely, but sometimes, the latest Greyhole releases might not be available for a couple of days in Amahi.
