Was pretty straightforward actually. Installed docker-compose using these instructions here (option 1):https://docs.linuxserver.io/general/docker-compose
Created my docker-compose file: https://pastebin.com/RNMZp8jN
Then just ran: sudo docker-compose up -d.
Thanks for your help, I'm going to try the same with their plexpass docker image as well.
