Windows 7 conversion to Amahi

Specs: Mobo: Asus P6T Deluxe x58 chipset; Proc: Intel I-7 @ 3.3; 16gb memory; 110GB Intel SSD (Amahi Installed); (1) 3ware RAID controller w/bbu currently in RAID V @8TB; (1x) 300Gb Velociraptor; (2x) 1 TB WD 7200 RPM RAID 0; (1x) 3TB WD Green 5400 RPM (my Windows backups). (1x) Intel dual port Ghz nic.

Since Windows 7 is out of service and since I really wanted HDA anyway, I installed Amahi with my eyes wide shut. In the windows environment, I had an entire RAID V volume (3ware) dedicated to my movie collection and another, if memory serves that is native to the Asus motherboard, which is set up as RAID 0. Then I have my backups on the 3TB slow drive and I think you're starting to get the picture.
Assuming neither of my arrays got touched, how do I go about accessing the data from those arrays? My guess is that I would build from within the CP somewhere but I just want to make da** certain I don't lose any data. The volumes in the BIOS' are set up. I'm just trying to access those drives so I can start manipulating my files and folders.

I don't use RAID, so can't be much help.

Have you tried searching the Amahi wiki? There are lots of tutorials there.
