Can I use Linux while the server is running?

Is it possible to use the linux GUI whilst the server is running to open applications and use them, or does the server hog all resources and shut the GUI off?

Yes you can use the GUI. Many people do this.

Linux is efficient enough to run a server while being used as a desktop
