Yes that is correct. I use cfdisk for all my disk partitioning.

Always something.
I wanted to delete either or both of the two small partitions, but the menu doesn't show a delete option. On the other hand, for the sdb1 partition there is a delete option. See pics.
There is a maximize option for the large SDB partition, but it's for experts only.
(I should point out that I'm attempting to do all this while the drive is mounted. But in the instructions, that comes after the partitioning and formatting. Not sure if this is even relevant.)

Try unmounting the drive first. I always create the partition before mounting the drive.

Ok. Unmounted (checked via Linfo, and it was no longer in the mounted list). Any guess about which small partition I should remove -- there are two small drives: one is small and one is very small.
EDIT: And unfortunately, no change: the cfdisk menu options are still restricted for the two small partitions -- no delete menu item for the small partitions.

Remove them all, then you can create 1 partition like it's a new disk.

Well, unfortunately, there is no change: there is still no delete menu option for the two small partitions; only the large one has a delete option.

Another option would be to connect it to a Windows box and remove all partitions using Windows Disk Management tool. You can then reconnect it to the HDA and have a disk with no partitions to start.

The one time I wish I owned such a thing. Just a couple of macs here.

Perhaps I could try rebooting the server? See if that shakes things loose. (incidentally, what is the preferred way to treat a USB drive? Unmount it before turning off the server? Unmount it before yanking out the USB cable ?)

You would need to unmount before removing from the server. You could try using GParted Live Cd. Boot the HDA to it with the USB drive connected and then remove all the partitions.
I don't think rebooting the server is going to accomplish anything here.
