Creating a network with no internet connection

Hi,
I've just installed Amahi for the first time, seems to have happened correctly. I wish to create a wireless network using a router and the Amahi server machine that doesn't have a connection to the internet. This is because i can't connect a server to my university network (only available internet)and i want to share files, stream, backup etc. wirelessly on a seperate network between several windows machines. The Amahi config and dashboard utilities seem to require an internet connection. Is it possible to do what i want? Any pointers would be much appreciated. Many thanks,

Amahi has not been optimized for this - it's meant to install apps over the net. sorry.
