Air Video (http://www.inmethod.com/) is an excellent streaming solution for iphone/ipod/ipads if you have video of all different sorts on your server. I suggested this a while back and it still remains a great idea.

This is one of the better "How-To's" I found on the net with getting this to run in linux. I'm afraid I would not even know where to begin in building and app to do this for others in Amahi.

For everyone coming here, I have found a solution that is not that complicated. I've installed Wine through the add software interface of fedora 14, installed the windows java version (XP), installed Bonjour 1.03 (couldn't get 1.06 to work) and after that I have installed the server software for Air Video. All windows versions and working great. Streaming to my iPad again.
