I would also like to run an IPv6 network. Changing Amahi for IPv6 support will be a major task. Will we use DHCPv6 or RA? How do we learn the delegated prefix, as there is no such thing as RFC1918 private addresses with IPv6.
Actually, we could just add the local scope IPv6 address to the DNS and that would take care of most usage cases. Just have to work out the reverse DNS...
I have a few activities before this, but you can put in a feature request on the bug list to add the local scope IPv6 address. This alone would make the server accessible over IPv6...

Understand that you won't be able to configure the DHCPv6 server through the Amahi GUI. If you still want to do that then..
Configure dhcpd6.conf located at
/etc/dhcp/dhcpd6.conf
You can refer to Amahi DHCP config for your setup.
/etc/dhcp/dhcpd.conf
There is an example, but it depends on what version of dhcpd you have for the path. On my machine the example config is located at
/usr/share/doc/dhcp-4.2.0/dhcpd6.conf.sample
dhcpd6 service manipulation.
