Remote control

Hi all, I need your advise.
I am looking for a program to be able to control the music on the server so I can select what will be played on the player.
I know you have 'apps' for Ipods to control ITunes and select what will be played. I would like to be able to do the same with my Ubuntu laptop, so that I can control what is being played remotely on the airport express.
Following on from this I would like to be able to do the same to control the music on the hda being streamed to users.
Any idea how I could do this?
