I'm considering using Amahi as a replacement for IPCop, since IPCop 1.4.21 appears to be in limbo w.r.t. snort updates (it hasn't been able to take snort updates for months, and there is no schedule for IPCop 2.x).
Looking through the docs I saw one person who mentioned they are running snort, but it doesn't appear to be one of the supported apps. Does anyone know if & how one might install snort on Amahi?

you can install any Linux app (if available in the repositories) by hand with yum.
in your case: yum install snort
you must be root to do this, configuring snort is out of scope for here, you can check the snort forums/FAQs for that.
