do i make a correct assumption by saying that my login data as well as all other input/output goes through internet completely unincrypted and not protected when using Amahi Web-Apps Proxy? If so is there a solution to this problem? (like using https to access the proxy).

Not sure if that is the case or not. Could ask the author who is one in the same author of Greyhole.
I do not know of an easy way to do https for it since it's run on port 80. Not sure that is a big concern though. Many have used it with no problems.
I think security is over rated and many people are paranoid for no reason. I have used many apps that are not encrypted via https with no problems. Not just Amahi apps, but others on the internet.
