I don't know if it is the right answer or not, but I went ahead and gave the mount shares locally a shot. I followed https://wiki.amahi.org/index.php/Mount_Shares_Locally, and now I can select my shares inside of plex.

Just thought I would post in case anyone else has the same problem.

The initial install was conducted with only the OS drive connected. After that, I added 4 drives using the disk wizard. I am now trying to add two additional drives. It is these two drives that the wizard mounted as sdb1 and sdc1 even though these mount points were already in use.
