Please submit this in the bug tracker so we don't lose sight of it. Also, can you create the structure you want and then in the dashboard create shares, mapping them to the sub folders? You can create a share and map it to any folder you choose. Then you would only enable Greyhole on the sub folder...

i am running the free version of ESXi 5 at home. Amahi is a VM on that. I like it because it takes VNC or other remote access off the server. i simply use the ViClient. i think you simply need to add the drive to your pool. Greyhole wont run unless it has a drive to use

i dont have any experince with xbmc on amahi but if your not using any of the apps you will likely not see any impact if you shut DHCP and DNS down on the server.
all in all i think Amahi will fit your requirements.
