It's clear from the data that someone changed the ownership of the /var/hda/web-apps folder, completely breaking the web server from being able to write or create new folders to that location, breaking app installs.

This is incorrect and that is why it's not in the documentation for installing.
Only if the initial install for some reason does not get the gateway right (e.g. if the HDA was moved or relocated to a different network with a different gateway IP), this would be needed.

yes. however, if you plan to use one of the VPN apps, I think OpenVPN, it uses 10.8, so i would avoid that range and stick to something else. HOWEVER, you MAY need to increase the netmask, as I think amahi defaults to 255.255.255.* if you have more than 153 DHCP devices and 98 static IP devices. we ...

Yes, I'm not sure how each client reacts to expired certs. Some may let you override expired certs (think of what browsers do), or, more likely, they may just refuse to connect (since VPN is typically more important than just browsing SSL).
