So my question is, is there a way for me to just always boot without seeing the pretty boot screen?
As root, edit /etc/grub.conf
Remove rhgb from the boot line and save the file.
If you want to see even more info, remove the word "quiet" as well.

If it were me, I would use a couple of gb for swap and the rest for /. You do not need a separate /home. To keep things simple, don't use LVM. The landing zone will take care of itself, don't dump every piece of data that you own on it in one shot to prove you can fill it. Start with some reasonable...

It is a bit odd. I just did a full reinstall and it took me all of about 3 minutes to add the second drive and use it with Greyhole. Pretty complicated, I know.
