You can have more then one profile on amahi.org, just go into your account and "Start building a new HDA!"
only issue might be is that it should be on a different network so the two hda's don't conflict with one another.

I have installed and uninstalled a couple of times with no problems after waiting a couple of minutes before going to the app

I would probably first get ruby on rails installed and working.
Then you will have to see what packages amahi uses and make sure they are installed
then you will probably have to start looking at the code and change it to reference the debian based packages.
