I resolved my issue (without solving the problem!) by installing ubuntu server 12 and doing the amahi install on that. So far, so good.

I had a look at hda-install.log and there was obviously a lot of stuff there! Tbh, I didn't really know what I was looking at, or looking for, but nothing really leapt out as suggesting it was time to man the life boats.
